Spinach and Spicy Beef Pierogi

  • Dough:
  • 2 C. sour cream
  • 5 C. flour
  • 2 Tbs. butter, melted
  • 2 large eggs
  • 1 egg yolk
  • 2 tsp. salt
  • 2 tsp. olive oil
  • Filling:
  • ½ lb. lean ground beef
  • 1 tsp. salt
  • 1/2 tsp. cayenne pepper
  • ½ tsp. chili powder
  • 1 C. fresh spinach
  • ½ lb. soft farmers cheese
  • 2 Tbs. garlic, minced
  • 2 Tbs. shallots, minced
  • ¼ C. green onions, chopped
  • 1 egg
  • 4 Tbs. butter
  • Directions
  • In a large mixing bowl, stir sour cream, flour, melted butter, eggs, egg yolk, salt and olive oil. Knead the mixture until it forms a soft dough. Divide the dough into two separate balls and leave covered for 10 minutes. Flour a hard surface or countertop. Roll out dough into a circle about 1/4-inch thick. Using a 3-inch circle cutter, cut out as many circles as possible. Set aside.
  • In a skillet, crumble and cook ground beef for 4-5 minutes. Season with salt, cayenne pepper and chili powder. Add in spinach and cook for an additional 2 minutes. Remove from pan and drain. Add beef and spinach to a large mixing bowl along with cheese, garlic, green onion and egg. Mix well. Spoon 1 Tbs. of filling to the center of each circle and cold over. Pinch the edges to seal. Water may help to seal.
  • Boil a large pot of salted water. Add in piergois and cook for 8-10 minutes or until they rise to the surface. Remove and drain. Meanwhile, heat butter in a large skillet over medium heat. Sear each pierogi for 2-3 minutes or until golden brown. Garnish with parsley and kosher salt. Serve
